So, let me make something very clear... I have never been known to eat very healthy... In fact I am probably known more for eating things that most people would find disgusting... In The World According To Za, there are many recipes floating around the space between my ears... Now I have to give myself some credit...I buy primarily organic, natural or somewhat healthy ingredients for my recipes... however I have a knack of taking healthy foods and turning them into... well this. I am a comfort food kind of guy, so every once in a while I will put up one of my original recipes... Let me know what you think... and be honest...
I call this one "The Chicken Cordon Buffalo Blue Burger w Sweet Potato Fries"
Here is a list of ingredients... feel free to explore your options and transform this disaster into something you will love... maybe...
1 l/b ground chicken
4 thin slices of prosciutto... ( I prefer Boars Head myself )
container of blue cheese crumbles... (You won't need it all, but it never hurts to have extra)
scallions...(green onions)
Bottle of your favorite buffalo sauce... ( the hotter the better )
2 medium sweet potatoes
sandwich flats... (there like flat hamburger buns... less filling... and I like that)
some EVOO... ( Extra Virgin Olive Oil )
sea salt
black pepper
I'm not big into measurements so use your best judgements...
First I prepare the sweet potato french fries, as they take the longest to cook
take your 2 medium sweet potatoes and cut them in 1/2 width wise...then take your 2 halves and cut them in 1/4 then cut them into fries... Pre-heat oven to 425 put your fries into any convenient to grab oven safe pan or dish and drizzle with EVOO season to taste with your sea salt and black pepper... put in oven and bake for about 45 minutes
Now for the meat of the recipe... literally
I like to take the cover to a jar lying around... size based on how big you want your burger... put some plastic wrap inside of the cover and fill with ground chicken...
slightly indent the center of the meat and fill with blue cheese crumbles and chopped scallions...
Now cover with more chicken and close up the sides...
I cook almost all meat on a grill pan, but use what you choose to make this convenient for you...
Cook until meat is done... if you don't have a meat thermometer... which I don't... done is pretty much when the chicken is not pink anymore...
Something I didn't do when I took these pics is grill my sandwich flats a bit for crispiness as well as to avoid sogging...
Place your patty on the flat and drizzle with buffalo sauce then top with a slice or two of prosciutto... cover with the remaining flat and add your crispy sweet potato fries to the plate...
Sometimes as an added no good for me extra... I like to make a dipping sauce for my fries... I like to mix cayenne pepper, minced garlic and organic mayo pulse it a bit in the processor and get ready for a spicy bite to co-exist with my sweetness...
